糯米 | 1400g |
生抽酱油 | 3茶勺tsp |
老抽酱油 | 1茶勺tsp |
生咸鸭蛋黄 | 适量 |
鲜粽叶 | 3包 |
槲叶 | 20张 |
肉馅 | |
猪肉 | 1200g |
老抽酱油 | 2汤勺tbsp |
生抽酱油 | 3汤勺tbsp |
盐 | 3/2茶勺tsp |
糖 | 1茶勺tsp |
味精 | 1/4茶勺tsp |
花椒粉 | 1茶勺tsp |
白胡椒粉 | 1/2茶勺tsp |
料酒 | 1汤勺tbsp |
十三香 | 1茶勺tsp |
蛋黄鲜肉粽 Sticky Rice Dumplings的做法
准备食材。
猪肉切小块,与所有调料一同放入大碗中搅拌均匀,用保鲜膜封好放入冰箱冷藏入味,隔夜最佳。
糯米和粽叶、粽绳分别放入水中浸泡2小时以上。
泡好的糯米控水,再拌入生抽酱油和老抽酱油备用。
用剪刀剪去粽叶的梗。取2个粽叶,光滑面向内。
将粽叶折成漏斗状。
先放入小部分糯米,再放入一个鸭蛋黄和猪肉。
再放入糯米至8成满。
然后将漏斗状的粽叶两边向内折叠。(一)

再将多余的部分顺势折下。
向左或向右收紧。
用粽绳在包好的粽子上缠绕几圈打结系紧。
剪去多余的粽叶和粽绳后放入水中。
槲叶粽包法:取两片槲叶剪去叶梗,光滑面向内。
根部对根部叠放。
中间放入糯米及猪肉。
左右向内折叠。
然后上下再向内折叠。
将两个折叠好的槲叶粽,封口处向内压在一起。
缠上粽绳系紧。
粽子全部包好后,凉水下锅,压上重物,大火煮开,水开后转小火煮2小时左右。

小贴士
1.糯米淘洗一下,泡2小时再用。
2.每个人包粽子的手法不同,粽叶和槲叶的数量可根据实际情况调整。
3.咸蛋黄和猪肉可替换为任意自己喜欢的食材,如干贝,干香菇等。
