啤酒 | 一瓶(玻璃瓶) |
葱、姜、蒜 | 适量(蒜多些) |
干辣椒 | 5个 |
八角 | 4个(适量) |
香叶 | 5片(适量) |
花椒 | 一小把 |
红油豆瓣 | 三大勺 |
冰糖 | 6块 |
生抽 | 2勺 |
食用油 | 适量(比炒菜量稍多) |
烧|啤酒龙虾Lobster with Beer的做法
龙虾处理干净,沥水备用。
Clean the lobster and drain the water, set aside.准备材料,注意姜切片,留蒜头,如图。
Prepare the ingredients, pay attention to slicing the ginger and leaving the garlic head, as shown in the picture.凉锅热油,加入3大勺红油豆瓣、八角、香叶、花椒、干辣椒、葱姜蒜翻炒出香味后放入龙虾,转大火煸炒1min,然后加入冰糖、啤酒、生抽继续用大火烧20min(整个过程不盖锅)。
Heat up the wok, add 3 tablespoons of chili bean paste, star anise, bay leaf, Sichuan peppercorn, dried chili pepper, green onion, ginger and garlic, stir-fry until fragrant, then add the lobster and stir-fry over high heat for 1 minute. Then add rock sugar, beer, soy sauce, continue to cook over high heat for 20 minutes (do not cover the wok during the whole process).翻炒下,收汁差不多,即可出锅。
Stir-fry until the sauce thickens, and then it can be served.装盘,搭配一碗凉面,浇上龙虾汁一拌,悠哉~
